Honey Mustard


Honey mustard is 1 part mustard and 2 part honey. This is great over chicken nuggets or fried pork chops.

Avocado Sauce


I bought cilantro and had so much of it that I started using all the ingredients I have around the kitchen to make new things.  I had a very ripe avocado and decided to pair them together.  This taste a lot like guacamole without the tomatoes.  I just love the color the avocado and cilantro produced.


Ingredients
  • 1 avocado
  • 3/4 cup cilantro
  • 2 cloves garlic
  • juice of half a lemon
  • 1 tablespoon vegetable oil

Direction

 Blend all the ingredients in a food processor.

Salsa


Ingredients
  • 2 ripe plum tomatoes, diced
  • 1/2 cup cilantro
  • 2 cloves garlic
  • 1/2 jalapeno pepper, diced

Direction

Combine all ingredients in a food processor and blend until desired consistency and serve with tortilla chips.


I also served this as a sauce to the Cast Iron Cilantro Chicken I made.

Tomato and Cilantro Sauce




I got this recipe from a cookbook titled "The Low-Carb Gourmet" by Karen Barnaby.  The original recipe is a vinaigrette but I altered the recipe to my liking. Here is the original recipe from the book:


Recipe
  •  2 ripe tomatoes, seeded and chopped
  •  3 tbsp white wine vinegar
  •  2 garlic cloves, minced
  •  1/2 cup extra-virgin olive oil
  •  1/3 cup cilantro leaves, coarsely chopped

Instructions
  1. In a blender or food processor, combine the tomatoes, vinegar, and garlic. Process until smooth. 
  2. With the motor running, slowly drizzle in the oil.
  3. Add the cilantro and pulse to combine.

I do not like to use that much oil when I am cooking or making sauces.  I only use 2 tablespoon of oil and instead of olive oil I used vegetable oil.  I did not have white wine vinegar so I used rice vinegar.  It turned out great! This sauce is great with pan seared lamb chop or chicken.  I suppose it would be great with pork chop too but I have yet to use it on pork.

Thousand Island Dressing



I was craving a Ruben sandwich and got all the ingredients to make it.  Of course I forget the Thousand Island dressing, so typical of me.  Since I did not feel like dashing out to the store again and my craving needed to be answered, I decided to look up the recipe for the dressing.  Great thing I had all the ingredients to make it.  I looked the the recipe in Allrecipes.com but changed it to my liking.

Ingredients
  • 2 1/2 tbsp Mayo
  • 2 tbsp ketchup
  • 2 tbsp sweet pickle relish
  • 1/2 tbsp hot sauce
  • dash of smoked paprika
  • dash of Worcestershire sauce
  •  salt and pepper to taste

 Combine all the ingredients in a bowl!

Hollandaise Sauce





What is yummier than hollandaise sauce drizzle over food? It is a bit scary how much fat goes in this sauce.  I always found it tedious to make hollandaise sauce, but then I saw how Ina Garten makes it in a blender I decided to try it. I used her techniques but a recipe from Allrecipes.com because I only make a small portion and Allrecipes.com convert the recipes for you.  

Ingredient

  • 2 egg yolks
  • 1/4 cup butter, melted
  • 1/2 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 pinch cayenne

Directions

  1.  Melt the butter in a small saucepan. 
  2. Place the egg yolks, lemon juice, salt, pepper and cayenne in the jar of a blender. Blend for 15 seconds. 
  3. With the blender running, slowly pour the hot butter into the blender and blend for 30 seconds, until the sauce is thick.  


I found that the sauce was too thick so I added 1 tablespoon of hot water.


BBQ Sauce


I love this BBQ sauce because it is not too sweet or thick.  I like bbq chicken but I don't like the taste of the store bought  bbq sauce because they are either too sweet, sour or too thick.  When I found this recipe on Allrecipes.com, I had to try it.  I substituted whatever I did not have. The original recipe is:

Ingredients
  • 1 1/2 cups brown sugar
  • 1 1/2 cups ketchup
  • 1/2 cup red vine vinegar
  • 1/2 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 1/2 tablespoons dry mustard
  • 2 teaspoon paprika
  • 2 teaspoon salt
  • 1 1/2 teaspoons black pepper
  • 2 dashes of hot sauce

Direction

Mix everything in a bowl until it is combined.


I didn't have red wine vinegar, so I used rice vine vinegar.  I ran out of dry mustard, so I used 1 tablespoon of prepared mustard and instead of paprika, I used smoked paprika.   Just combine all the ingredients in a bowl and cook!
