Chicken Soup



Ingredients
  • 1/2 chicken breast, cut into one inch chunk
  • 2 cups Latin Blend Mix 
  • 1/2 can diced tomatoes
  • 1 1/2 cup chicken stock
  • 1 1/2 cup water
  • 1/2 teaspoon cumin
  • salt & pepper to taste

Directions
  1. Bring water and stock to a boil.
  2. Combine all ingredients and bring to a boil.
  3. Simmer for 40 minutes.

I served this with brown rice to make it more hearty.
